Prep Time 30 minutes
Total Time 30 minutes

Equipment

  • large stockpot

Ingredients

  • 3 lbs baby dutch yellow or red potatoes
  • salt to boil

Instructions

  • Put potatoes in large pot. Fill pot with enough cold water to cover them by about an inch. Add salt to the water. Then bring the water to a rolling boil over high heat. Once boiling, reduce the heat to a simmer with medium heat. Simmer for 15-20 minutes.
  • After 15 minutes, test the potatoes with the point of a knife. You want them to be tender but still firm enough to not be falling apart. Once they’ve reached this consistency, they’re done. Now, drain the potatoes and cool them off by running cold water over them. Once cooled, cut the potatoes into bit sized chunks.

Notes

For Mashed Potatoes: Use larger potatoes (like russet potatoes) and keep in a little longer if boiling. Also, peel before boiling if you don't like skins in your mashed potatoes.
