Ingredients
- 2 eggs large
- 1.5 cups cottage cheese 2% recommended
- 1 tsp onion powder
- 1.5 tsp garlic powder
- 2 tsp oregano
- 1 tbsp nutritional yeast
- avocado oil spray as needed for parchment paper
Instructions
- Blend all ingredients in food processor until pureed.
- Use a baking sheet with an indentation, so the dough won't run. Use parchment paper on baking sheet. Spray bottom of parchment paper that lines baking sheet and press down to secure the paper. Then spray the top of paper. Pour dough mixture onto baking sheet and spread evenly into a rectangle.
- Bake at 375 degrees for 30-40 minutes. It should be golden brown when done. Let cool for 5-10 minutes. Slice flatbread into the sizes you desire. (I recommend 6 slices for 3 servings)

Freezing is not recommended. The flatbread is very thin, so when making a sandwich with it, use thinner slices of tomato etc to best keep the sandwich together. Will keep well in refrigerator up to 3 days.
