Let’s make delicious zucchini mushroom chicken stir fry. You can slice the zucchini by hand, but I’m using the KitchenAid Fruit and Vegetable Spiralizer to get perfectly uniform slices… and also because it’s really fun to use (and less work for me!). Use the small core slicing blade.
Beautiful spirals will form. You can keep them just like this…
Or you can slice them down the middle to create perfectly uniform half slices, which is what we will do. Then add all your ingredients into a wok or large deep pan (which I’m using), cover and cook through until the zucchini is “al dente”. Soft, but still retaining a crunch to it.

Zucchini Mushroom Chicken Stir Fry
Equipment
- KitchenAid Spiralizer Attachment
- Large, Deep Pan or Wok
Ingredients
- 4 zucchini small to medium
- 1/2 tsp avocado oil
- 1 1/2 cups mushrooms sliced
- 8 oz water chestnuts sliced
- 2 garlic cloves, minced
- 3 tbsp fresh ginger peeled and minced
- 1/4 red onion chopped
- 4 tbsp coconut aminos
- 1 tbsp sesame oil toasted
- 8 oz chicken breast cooked, sliced
- 1/2 tsp sea salt
Instructions
- Slice zucchini into uniform pieces. You can do this by hand, but I’m using the KitchenAid Fruit and Vegetable Spiralizer Attachment. If using this, use the small core slicing blade on 4 small to medium zucchini.
- You can leave them in groupings of spirals for a really elevated presentation (see video). But we're going to cut them straight down the middle to make uniform individual half slices.
- In large pan, spray some avocado oil. Add in your sliced zucchini, spray zucchini with a little more avocado oil, add in 1 1/2 cups of sliced mushrooms, one drained 8 oz can of sliced water chestnuts, 2 cloves of minced garlic, 3 tbsp freshly minced ginger, 1/4 chopped red onion, 4 tbsp of coconut aminos, 1 tbsp toasted sesame oil, and about 8 oz cooked chicken breast, sliced. Turn the burner onto medium heat. Stir and mix everything well. Add a few dashes of sea salt. And stir it together again. Cover and allow to cook for about 10-15 minutes. Ideally, the zucchini is soft but still has a crunch to it, so let the zucchini dictate when the dish is done. Then, turn the burner off, plate and serve.
