Spiralize Cucumber the Fun Way

First, we have to spiralize our cucumber. You can do it by hand with a manual spiralizer, but today I’m using a really fun device. It’s the KitchenAid Spiralizer Attachment for Fruits and Vegetables. It attaches to any KitchenAid stand mixer and it spiralizes produce as well as creating perfectly uniform slices.

Back to the recipe! Now, we are only using about a third of an English cucumber today (which is very long!), which is perfect for one serving. Feel free to spiralize more cucumbers depending on how many you will be serving or if you would like to meal prep and just adjust the recipe accordingly. In the recipe car below, it will adjust the recipe ingredients for you, you just need to adjust the serving size. 

For your reference, we are using the fine spiralizing blade on the KitchenAid Spiralizer for this recipe.

Making the Creamy Sauce Recipe

Next, in a medium bowl, add 1 tbsp of Greek yogurt, 1 teaspoon of avocado oil mayonnaise, 1 teaspoon of apple cider vinegar, 1 teaspoon of yellow mustard, roughly one teaspoon of dill.

Mix this together until fully combined. You may add sea salt and ground pepper to taste if you so desire. 

Making the Spiralized Creamy Cucumber Salad 

Now add the spiralized cucumber we’ve already made to the medium bowl. And add two tablespoon of chopped red onion. Now mix that together. Start to coat the cucumber noodles in the sauce.

Now add roughly one tablespoon of capers and some caper juice. Feel free to add more capers if you so desire. Gently combine until the vegetables are completely coated. You will want to do this as delicately as possible.

Optimum Results

For optimum results, cover in an airtight container. Let it sit in the refrigerator overnight so that it fully marinates. But feel free to eat immediately after making!

How Does it Taste?

It looks absolutely delicious. But how does it taste?

It is so delicious and refreshing. And the spiralized cucumber just sort of gives it an unexpected but absolutely wonderful texture. And you’re rolling it up like a pasta. So, it’s just like a fun, different, interesting way to eat cucumber. This feels like we have revolutionized the cucumber salad experience!

I’m always looking for fun ways to get more veggies in my diet and this is such an awesome way to do it. It’s fun to eat and it’s super delicious to taste. I can’t believe how good it is.
