In a medium bowl, add 1 tbsp greek yogurt, 1 tsp avocado oil mayonnaise, 1 tsp apple cider vinegar, 1 tsp mustard, 1 tsp dried dill weed spice, several dashes of sea salt and ground pepper. Mix this together until fully combined.
Now add 2 tbsp chopped red onion, 1-2 tbsp capers with caper juice, and the sliced cucumber. Gently combine until the vegetables are completely coated.
Notes
You can eat immediately, but for best results, allow to marinate in an airtight covered container in the refrigerator overnight. Will keep well for up to 3 days in the refrigerator. This is for 1 serving size. Feel free to increase the servings for meal prep or serving multiple people.
