Homemade Cookies and Cream Ice Cream
Let’s make the most delicious Oreo Cookies and Cream Ice Cream from scratch using just a few ingredients.

Cookies and Cream Ice Cream | How to Make

Cookies and Cream Ice Cream | Recipe
We’ll start by making our base, which is a traditional vanilla ice cream recipe with simple, wholesome ingredients. In a large saucepan, combine the following ingredients with the heat off. We’re going to add three cups of half and half, 2/3 of a cup of granulated cane sugar, 2 tsp of vanilla extract, 1/8 of a teaspoon of sea salt, and as an optional addition, you can add 1/4 teaspoon of zantham gum, which is considered a natural stabilizer and helps prevent ice crystals from forming and it’s often used in organic food products.
Then set the sauce pan on your stovetop range. We’ll turn the heat on to medium low and we’ll stir it often for about 5 minutes until the sugar dissolves and the mixture is warmed through.
Using a whisk is very helpful to separate everything out because the sugar can clump together a little bit. And depends what kind of pan you have. If you have stainless steel pans, using a regular whisk is absolutely way to go. But if you have a non-stick coating or anything that doesn’t really handle metal well, these are fantastic. They’re silicon coated whisks. They’re awesome. They do the job without damaging the pans.
It’s super normal for it to get a little frothy. I mean, you’re basically becoming a hand  frother at this point, but you don’t want it to boil. There’s a difference between frothing and boiling. Very fine line. Now turn the burner off and let it cool for a few minutes. Then we’re going to pour it into a covered, heat proof, airtight container.
Now, we’re going to put it into the refrigerator to chill for at least 2 hours. It has to be fully chilled before ice cream can be made.
The next step is chopping a sleeve of Oreo cookies. We got double stuff, but feel free to get any kind of sandwich cookie that sounds good to you. So essentially we have finely chopped or minced the Oreo cookies.
Cookies and Cream Ice Cream | Churning
So the next step is going to be to churn the ice cream. You’ll want to decant your chilled ice cream batter into something that has a pore spout as it will be much easier and less messy when pouring into the ice cream maker attachment.
set your ice cream maker attachment up properly on the stand mixer (feel free to refer to my KitchenAid Ice Cream Maker Attachment Tutorial and Review for how to do this).Â
Let’s set the stand mixer to stir and then pour that ice cream batter in. When the ice cream starts creeping up towards the top and you can see a ring around the top of the ice cream maker, you know it’s ready. This could be anywhere from 13-20 minutes. This is the time to start adding your fixings, which for us, is our chopped Oreos. You’re going to do it a little bit at a time. Again, decant them into something that has a little pore spout on it. It’s just easier to work with when it comes to this.
The entire process with the Oreo cookies added in, for me, was about 16 minutes, I would say. That’s just a reference point. This is my experience with it. Yours might be different. It depends how chilled the bowl is and your ice cream base as well. So many factors.
You don’t want to overturn it at this stage. I let my Oreos churn very fully and incorporate into the ice cream. But perhaps you could turn it a little less if you like the Oreo chunks to be a little more distinctive.
So, now that the ice cream is completely finished, you’re going to transfer the ice cream into a dessert dish or airtight freezer container for storage.

Now, I just want to also let you know that if soft serve is your bag, now is when you want to eat it. You don’t need to put it into the freezer any further because it is the perfect consistency for soft serve ice cream right now.
If freezing the ice cream in containers, put it in the freezer for about 2 hours to fully form into ice cream.

So, how does it taste? Absolutely amazing. To me, it tastes so much better than store bought. It just tastes wholesome to me. I hope you love this recipe as much as I do!Â

Oreo Cookies and Cream Ice Cream
Equipment
- KitchenAid Silicone Spatula best way to transfer ice cream from ice cream maker bowl
Ingredients
- 3 1/2 cups half and half half and half = half whole milk, half cream
- 2/3 cup cane sugar granulated
- 2 tsp vanilla extract
- 1/8 tsp sea salt
- 1/4 tsp xanthan gum optional if freezing overnight after making
- 13 oreo cookies
Instructions
- Add all ingredients into a large saucepan. Cooking on medium-low on stovetop for 5 minutes, whisking all ingredients until warmed through and fully mixed together. Allow to froth but not boil. Pour into a heat resistant, airtight container. Cover and chill in refrigerator for at least 2 hours.
- Finely chop 1 sleeve of oreo cookies (roughly 13 cookies). Set them aside.
- After 2 hours, decant ice cream recipe into a container with a pour spout and pour into your ice cream maker. Follow instructions of your ice cream maker and churn until ready.
- Add chopped oreos in at the very end of the churn. The longer you mix them, the more incorporated they will get. Use less time for larger chunks of oreo to remain.
