Tuna Salad Sandwich is a Low Carb Recipe?

Yes! A Tuna Salad Sandwich CAN be a low carb recipe if you pair it with the right bread substitute. Today let’s make a delicious low carb Tuna Salad, by Stuffing it in Red Peppers instead of bread.
We’ll also make the most delicious, healthy version of this meal by using wholesome ingredients that are so delicious. It’s also got some wonderful protein, which is an added bonus.
I’m Allison with Simple Fantastic Kitchen. Thanks for joining me today! Let’s get started.
Tuna Salad Stuffed in Red Bell Peppers | Recipe
We’ll start by chopping one bunch of celery. Then chop one orange bell pepper and discard all of the seeds and pith.
Now chop one apple and a bunch of green onions.
Next slice six red bell peppers in half. You’ll want to cut out the seeds and pith and discard them.
In a large bowl, combine ingredients starting with celery, then orange bell pepper, the apple, and green onions.
Now add two cans of tuna. No need to drain them. Just put the water from the cans right in. Each can is approximately 5 oz and I might mention, I also get tuna in water rather than tuna in oil. I have several preferred brands. My two favorites are Wild Planet Premium Albacore Tuna and Safe Catch Ahi Yellowfin Tuna.
Next add two tablespoons of mustard, four tablespoons of avocado oil mayonnaise, one tablespoon of dried dill, and two tablespoons of lemon juice.
Then mix up all the ingredients. The tuna will be in chunks when you put it in so be sure to use the wooden tongs to chop up the tuna more finely as you mix. Continue mixing until it’s fully combined. You may add salt and pepper to taste at this point, or wait to add it until the end. Even if I add it to taste at this point, I still add some black pepper at the very end too!
Now let’s get our halved red peppers and you’re going to stuff each pepper with the tuna salad.
Tuna Salad Stuffed in Red Bell Peppers | How Does It Taste?
The only thing left to do now is give it a taste. That is so good. It’s so refreshing. Oh my gosh. And the red pepper just finishes it off so beautifully. Bread is awesome. There’s a place in this world for bread. But this makes it the healthiest possible meal, the lowest possible carbs and you’re not losing any of the taste. It is so good and refreshing.
When you’re making this recipe, it really depends how many people you’re going to be serving. I made this recipe to be serving six people but if you’re making it just for you, adjust accordingly. The recipe card below allows for detailed adjustments, so feel free to use that tool.
One serving has only 14 grams of carbs and really only 10 grams of net carbs. And all of the carbs are coming from whole fruits and vegetables, which provides for so much nutrition.
It also has 11 grams of protein per serving, which is wonderful. Feel free to increase the number of cans of tuna (but keep the remaining ingredients the same) if you would like to increase the protein per serving. You may need to adjust the wet ingredients to taste (mayonnaise, mustard, lemon juice) just to make sure it doesn’t taste dry, without increasing the carb load.
Thanks so much for joining me today. I hope you enjoy this recipe as much as I do! I’ll see you on the next one!
