Make Fresh Pesto Sauce in a Mortar and Pestle

Ingredients
  

  • 4 garlic cloves, quartered
  • 25 basil leaves
  • 3 tsbp pine nuts
  • 2 oz parmesan cheese grated
  • 2 tbsp lemon juice
  • 1/2 cup olive oil extra virgin

Instructions
 

  • Put garlic cloves into mortar. Grind into a garlic paste. Add basil, a few leaves at a time and continue to grind. Then add pine nuts, 1 tbsp at a time, and continue to grind. Add parmesan cheese, one handful at a time. Grind in mortar until fully combined and paste-like. Add lemon juice and mix until fully combined. Then add olive oil, a little at a time until fully mixed in. Then add to the pasta of your choice, serve and enjoy!

Notes

You can also make this recipe in a food processor and it will be lovely. However, the mortar and pestle brings out unique and wonderful layers of flavors.
