Ingredients
  

Bagels

  • 4 cup bread flour
  • 2 tbsp baking powder
  • 2 tsp salt
  • 4 tbsp Nutritional Yeast
  • 4 eggs
  • 32 oz nonfat greek yogurt (roughly 4 cups)

Making Self-Rising Flour

  • Combine flour, baking powder and salt in mixing bowl. Then add nutritional yeast and combine. Set dry mix ingredients bowl aside.

Making the Bagel Dough

  • In stand mixer, use whisk attachment. Add eggs and whisk them. Switch to paddle attachment. Then add in yogurt and mix together. Once creamy, switch to dough hook attachment. Then add dry mix ingredients, slowly on low speed. Continue to add dry ingredients and mix together until dough is fully formed.

Making the Bagels

  • Pre-heat oven to 350°F. Use extra flour to help while working with the dough, which can be sticky. Have a lined 9x13 baking sheet to put the completed bagels onto. Divide the dough into 16 equal pieces. Then roll each piece between your hands until it becomes a long string-like piece. Bring both ends of the dough together and press down, forming a circle with a hole in the center. That is your bagel. Place each bagel onto the baking sheet, then repeat until you have made all the dough. (Note: each baking sheet accommodates about 8 bagels, so you will probably have to make 2 batches if you make the full recipe.)

Bagel Toppings

  • Whisk one extra egg and take a basting brush to brush the tops of each bagel with egg, cover as completely as you can. Then take 1/4 tsp of your the Everything But The Bagel topping and sprinkle over each bagel.

Baking

  • Put bagels into oven for about 23 minutes at 350°F. Check on your bagels by sticking a sharp knife into one of them. If there is dough on the knife, keep them in the oven until dough no longer appears. Once the knife is clean, you are ready for the next step. Put the bagels back into the oven and raise the temperature to 500°F for about 5 minutes so that the tops will brown. Always check on your bagels to see if they need more or less time. Once nicely browned, remove bagels from oven and allow to cool for about 10 minutes. Then slice, serve and enjoy.

Notes

Note on freezing: Pre-slice the bagels before freezing, then you can take each slice out directly from the freezer and put it into your toaster or air fryer—no need to defrost. They keep extremely well this way for up to 3 months.
