Ingredients
  

  • 1 cup strawberries
  • 1 1/2 cup cottage cheese 4% full fat recommended
  • 2 tbsp maple syrup
  • 1/8 tsp xanthan gum optional but recommended

Instructions
 

  • Combine cottage cheese, strawberries, maple syrup and xanthan gum, if adding into a food processor. Blend until smooth. Pour into a loaf pan or ice cream container. Freeze overnight. Allow to thaw for 30 minutes or so, then scoop into a dish, serve and enjoy!

Xanthan gum to help prevent ice crystals from forming in freezing and is recommended in this recipe but can be made without it.
