Moroccan Pancakes Recipe (Baghrir)
Equipment
- 1 Blendtec Blender (high powered blender recommended)
- 1 Crepe Pan (or griddle)
- 1 Clear Cake Stand (or large platter)
Ingredients
Pancakes
- 3 1/8 cup water (lukewarm)
- 1 tbsp active yeast
- 1 tsp sugar
- 1 tsp salt
- 1 tsp baking powder
- 3/4 cup all purpose flour
- 1 1/2 cup semolina flour
- 12 sprays Chosen Foods 100% Pure Avocado Oil Spray (1 spray per pancake)
Honey Butter Mixture
- 8 tbsp butter
- 8 tbsp honey
Instructions
- Pour lukewarm water into blender followed by active yeast. If using Blendtec, mix on batter cycle for about 10-15 seconds (if using a regular blender, blend until fully combined).
- Add sugar, salt, and baking powder to blender. Blend again for about 10-15 seconds or until fully combined.
- Add all purpose flour and semolina flour to blender. Blend again until the batter is completely smooth with no lumps. Cover and let sit for 10-15 minutes to let the active yeast work its magic.
- On a griddle or crepe pan, spray with avocado oil before each pancake, raise the heat to medium or medium high. Then measure out 1/2 cup of batter and pour it into 6 inch diameter pancakes. Wait and observe as bubbles begin to form. Do not flip the pancake! Once the batter is bubbly and has a uniform color on top, check the bottom by carefully lifting a small section without flipping the pancake. Once the bottom is a golden brown color, carefully remove the pancake bubbly side up with two long spatulas and move it onto a plate (an extra long crepe spatula is very helpful in this process). Repeat this process until all the batter is made.
- Make your honey butter mixture by melting 1/2 stick of butter and combing it with equal parts honey.
- Place honey butter mixture into a small dish in the middle of a cake stand or platter. Surround the mixture with the Moroccan pancakes in an aesthetically pleasing way, as presentation is very important! Then serve your guests and enjoy by ladling out the topping, rolling up the pancakes and breaking them in two, eating them by hand!
